Seriously Delish BBQ Chicken Wings

Serves: 6

Ingredients


3 lb. whole organic chicken wings, tips removed, cut into 2 pieces
1 T rendered bacon fat
3/4 C white onion, chopped (approx. 1/2 medium onion)
2 t garlic, chopped fine (1 medium clove)
1 15-oz. can organic tomato sauce
1 t ginger, minced
1 T ground mustard
1 t ground cumin
1 t celery seed (optional)
1/8 t ground cloves

There are certain times when chicken wings are fun for entertaining. Why not make them using healthy ingredients? Bottled sauces are usually filled with high fructose corn syrup and well-masked MSG. Try out this dark and rich flavorful homemade version; if you like spice, add a bit of your favorite hot sauce. Be sure to save a little sauce on the side for dipping once the wings are done.

Preheat oven to 375 degrees.

  1. In small saucepan, melt rendered bacon fat over medium heat. Add onion and saute about 5 minutes without browning. Add garlic and ginger and saute about 1 minute. Add remaining ingredients plus 1/2 t sea salt and a few grinds of freshly ground black pepper, stirring to combine. Simmer for 20 minutes to meld the flavors together.
  2. While sauce is simmering, rinse the wings and pat dry well. Season the wings on both sides with an even coat of sea salt and pepper. In a medium bowl, add about 1 C of the sauce and thoroughly coat the wings. Place wings onto a parchment or wax-paper lined roasting pan with some space between each wing. Bake for 15 minutes, until skin is crispy. Serve with extra dipping sauce on the side.

Note: Tamarind paste can be found in Asian grocery stores or at Whole Foods in the spices section. Tamarind is one of the key ingredients that gives flavor to Worcestershire sauce without the HFCS. Also, there is no need to throw away the chicken wing tips. Simply freeze them in a ziploc bag for use in a soup or stock or to add flavor while cooking rice.
